Blueberry Muffins


1/2 c Butter
1 c Sugar
2 c Flour
1/2 c Milk
2 ts Baking powder
1/2 ts Salt
2 c Blueberries
1 ts Vanilla
2 Eggs

Tips :
Sugar, for topping Cream butter and sugar. Add eggs, one at a time. Mix until blended. Sift all dry ingredients, add alternately with milk and vanilla. Mash 1/2 cup blueberries; stir into batter. Add remaining whole berries. Grease tins or use liners. Pile batter high. Sprinkle with sugar. Bake at 375F for 30 minutes. Makes 12 muffins.

Strawberry Jam


4 cups of fresh strawberries ( washed, capped and sliced in half)
2 cups of water
3/4 cup of sugar
3 tablespoons of flour
1 tablespoon of butter

Tips :
dash of salt
Combine strawberries, salt and water in medium pot. Cook over
medium heat until strawberries are soft. Combine sugar and flour, pour enough hot juice from
berries to mix very thin. Add to strawberries stir until mixed well. Add butter and stir occasio nally
until thickens. Serve with hot biscuits. Frozen strawberries may be used. If using other be rries
or fruits, adjust the amount of sugar to taste.

Christmas Eggnog (from United Kingdom)

 Eggnog is a drink with a long history. It has been loved as a festive beverage in England for many centuries, but its form has changed considerably from the original. Modern eggnog forever includes some traditional ingredients —eggs, certainly, and lots of sugar—and sometimes incorporates relatively fresh ones like ice cream.

PREPARE:20 minutes
SERVES:10
Ingredients:6 eggs, separated
8 tbsp. sugar
1 cup (1/2 pint) heavy or whipping cream 6 1/2 cups whole milk
1/4 cup brandy or more (optional)
1 qt. vanilla ice cream
freshly grated nutmeg (optional)

Tips :
1. In a large bowl, beat the egg yolks until smooth. Add 6 tbsp. of the sugar, the cream, 6 cups of the milk, and (if you're using it) the brandy and mix well. Cover and refrigerate for a minimum of 1 hour, until chilled.
2. Before serving, in a small bowl beat the egg whites until frothy. Then add the remaining 2 tbsp. sugar and 1/2 cup milk and stir just until blended.
3. Remove the egg yolk mixture from the refrigerator. Add the egg white mixture and stir just until blended. Add the ice cream. It's your choice whether to leave the ice cream in one large block or to break it up into individual scoops. Sprinkle nutmeg on top (if desired) and serve, using a ladle to fill individual mugs. Th
e ice cream will gradually melt in the mugs, adding a delectable consistency and underlying smooth flavor. You, your family, and friends will never settle for commercial eggnog again.
